The ultimate focaccia sandwich

Turn that pizza dough into a mouthwatering sandwich from Chef Randy Feltis.

Pull out the pizza pans and the bread knives! But wait, it’s not pizza? Nope, it’s a focaccia sandwich with Chef Randy Feltis!

The ultimate focaccia sandwich

Serves 4-6

Ingredients:

  • 1 lb. ball pizza dough
  • ½ cup chopped artichoke hearts
  • ½ cup chopped olives
  • ½ cup roasted sweet peppers
  • 4 oz. sliced calabrese
  • 4 oz. thinly sliced prosciutto
  • 4 oz. thinly sliced mortadella
  • 8 oz. sliced fresh mozzarella
  • Handful of arugula
  • ¼ cup sliced shallots (for bread garnish)
  • Rosemary (for bread garnish)
  • ‎Sea salt
  • Olive oil

Method:

Hand spread the pizza dough into a 9-inch round ‎by 1-inch thick. Place on a pizza pan and punch with fingers, then brush with olive oil, sea salt, shallots and rosemary.

Place another pizza pan basted with olive oil on top to stop the dough from rising. Bake for 10 minutes at 400 °F. Let rest for 10 minutes.

Cut focaccia horizontally through the middle. Start to layer the ingredients on the bottom half. Lay down arugula, meats and cheese, then the veggies.  ‎

Place top back on and cut wedges like a pie then serve.
