This potato hash recipe from Chef Jason Parsons may convert some Brussels sprouts haters!

Roasted Brussels sprouts

Ingredients:

  • 1 cup diced smoked bacon
  • ½ cup sliced shallots
  • 2 cups of diced Yukon gold potatoes, cooked
  • 2 tbsp. butter
  • 3 cups of sliced raw Brussels sprouts
  • ¼ cup chicken stock
  • 1 tsp nutmeg
  • Salt and pepper

Method: 

Fry the bacon in a pan over high heat. Add the shallots and sauté until golden, then toss in the potatoes and butter.

When the potatoes are cooked through, add the Brussels sprouts, chicken stock and nutmeg.

Cook for 2 minutes, then season with salt, pepper and serve.
