Watermelon and feta salad

Watermelon is truly a hydration hero on a hot summer’s day—try Dr. Joey's watermelon + feta salad!

METHOD

  1. Combine the watermelon, cucumber, arugula and olives in a small bowl, combine the olive oil, balsamic vinegar and sea salt and whisk until combined.
  2. Drizzle the salad with the vinaigrette.
  3. Top with mint leaves and sprinkle with feta.
  4. Enjoy!
