Sweet & sour meatballs

Add pineapples to a perfect meal of sweet and sour meatballs that the whole family will enjoy.

  1. Preheat the broiler and position one oven rack about 8 inches below the element.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Combine beef with panko, onion and garlic powders and salt. Mix well then shape into about 20 meatballs. Place on prepared sheet and spray meatballs with cooking spray.
  4. Broil for about 3 min or until well-browned (meatballs won’t be cooked through yet).
  5. Drain the pineapple, saving juice. Combine the pineapple juice with tomato sauce, honey and vinegar in a large pot.
  6. Bring to a boil, then add meatballs, reduce heat and simmer, covered, 10 min or until meatballs are cooked through.
  7. Stir in pineapple chunks and sesame oil.
  8. Package into 2 zip-lock bags, then cool completely in the fridge (leave the bags open).
  9. Freeze up to 2 weeks. To reheat, thaw overnight in the fridge then reheat gently on the stove or in the microwave.
  10. Serve over rice.
