Chicken tacos with green mango salad

INGREDIENTS

Mango Salad

METHOD

  • Preheat oven to 300F.
  • Julienne mango, red pepper, cucumber and toss in a bowl with rice wine vinegar and olive oil. Garnish with mint and set aside.
  • Spread out chicken, and cheese ‎on taco shells. Toast in oven for one minute. Remove and top with a splash of yogurt, red onion, avocado and coriander.
  • Serve with salad and enjoy!
