Special tool: sharp knife
- Preheat oven to 300F.
- Julienne mango, red pepper, cucumber and toss in a bowl with rice wine vinegar and olive oil. Garnish with mint and set aside.
- Spread out chicken, and cheese on taco shells. Toast in oven for one minute. Remove and top with a splash of yogurt, red onion, avocado and coriander.
- Serve with salad and enjoy!
