Curried chickpea and kale salad

Curried chickpea and kale salad

Ingredients:

  • 1 Tbsp of extra virgin olive oil
  • 2 cups of chickpeas, rinsed and well drained
  • 2 garlic cloves, slicked
  • 2 tsp of fresh ginger
  • ½ tsp of cayenne
  • ¼ tsp of curry powder
  • ½ tsp of salt
  • 6 cups of chipped kale
  • 2 cups of cherry tomatoes, halved
  • 1/2 cup of hemp seeds
  • 1/2 lemon, squeezed and juiced

Instructions:

Heat oil in a large skillet over medium heat.

Toss in chickpeas and garlic and cook for 3 minutes.

Stir in cayenne, curry and salt and cook for 2 minutes longer.

Add kale to skillet and cook until kale wilts.

Finally, add in tomatoes, hemp seeds and lemon juice – cook for 1 remaining minute. Enjoy!
