Hands up if you want an easy spring or summertime salad to make. This tasty salad is filled with greens, protein and antioxidants — tastes good and good for you!
Curried chickpea and kale salad
Ingredients:
- 1 Tbsp of extra virgin olive oil
- 2 cups of chickpeas, rinsed and well drained
- 2 garlic cloves, slicked
- 2 tsp of fresh ginger
- ½ tsp of cayenne
- ¼ tsp of curry powder
- ½ tsp of salt
- 6 cups of chipped kale
- 2 cups of cherry tomatoes, halved
- 1/2 cup of hemp seeds
- 1/2 lemon, squeezed and juiced
Instructions:
Heat oil in a large skillet over medium heat.
Toss in chickpeas and garlic and cook for 3 minutes.
Stir in cayenne, curry and salt and cook for 2 minutes longer.
Add kale to skillet and cook until kale wilts.
Finally, add in tomatoes, hemp seeds and lemon juice – cook for 1 remaining minute. Enjoy!
