3 delicious homemade condiment recipes

Chef, Mike Ward shows us how to use the basic condiments in your fridge to create an Asian marinade, tartar sauce, and BBQ sauce.

Homemade Thai Dressing/Marinade

Ingredients:

  • 2/3 cup soy sauce
  • 2 tbsp white sugar
  • 2 tbsp rice wine vinegar
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • 2 tbsp fish sauce
  • 1 tbsp grated ginger

Instructions:

  1. Combine everything in a bowl.
  2. Use as marinade for chicken thighs, pork chops and pork tenderloin. Marinade in a ziplock for 20 minutes or 3 hours.
  3. Or reduce in a pot by two-thirds to create a sauce for grilled chicken and pork.

Homemade Tartar Sauce

Ingredients:

  • 1 cup plain yogurt
  • 1 cup mayo
  • Zest of ½ lemon
  • Juice of ½ lemon
  • ¾ cup finely chopped pickles (or sweet relish or capers)
  • Salt & pepper to taste

Instructions:

  1.  Combine all ingredients in a bowl, check for seasoning, add salt and pepper if desired.
  2. Perfect on grilled salmon, any fish, roasted chicken or even roast vegetables.

Homemade Spicy BBQ Sauce

Ingredients:

  • 1 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • ¼ cup molasses
  • 1 tbsp sriracha
  • 1 tbsp smoked Paprika

Instructions:

  1.  Combine all ingredients in bowl and you’re ready to go.
  2. Marinade ribs or chicken wings.
  3. BBQ or grill the meat, then slather the sauce over as you grill.
