Chef Mike Ward turns the hearty chickpea into a delicious, warming soup in this easy recipe.
Chickpea chowder
Ingredients:
- 1 can chickpeas (rinsed)
- 1/4 onion
- 1 1/2 – 2 cups vegetable or chicken stock
- 1 clove garlic
- Dash of your favourite hot sauce
- 1/2 lemon
- Splash of extra virgin olive oil
Method:
Throw all of your ingredients into a blender, minus the lemon.
Blend until silky smooth, approximately 60 seconds. You may want to add more stock depending on the thickness you prefer.
Heat up in a pot. Season with salt and pepper.
Garnish with zest and squeeze of lemon and olive oil.
