Garlicky fried rice with chicken

Prep time: 10 minutes
Total time: 25 minutes

Ingredients:

  • 2 tsp canola oil
  • 3 eggs, beaten
  • 4 tsp sesame oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 skinless, boneless chicken breasts, diced
  • 1 cup frozen shelled edamame, thawed
  • 1 red bell pepper, diced
  • 3 cups day-old cooked rice
  • 3 tbsp soy sauce

Method:

Heat a large non-stick frying pan over medium. Add canola oil, then eggs. Stir often to scramble eggs until softly set, about 1 minute. Transfer to a small bowl.

Add sesame oil to pan, then onion and garlic. Cook until onion is soft, about 3 minutes. Add chicken and cook until no pink remains, about 2 minutes. Increase heat to medium-high. Add edamame and pepper. Cook, stirring often, until peppers are tender, about 4 minutes. Stir in rice and eggs, then drizzle with soy. Cook until rice is warmed, 2 minutes.

Serves 4 | Per serving 448 calories, 35 g protein, 43 g carbs, 14 g fat, 3 g fibre, 784 mg sodium.
