Surprise guest at your door? Whip up Sandi Richard‘s super speedy dip and you’ll be ready for any impromptu visits!
Sandi’s surprise dip
Makes: 3 dinner plates (dip), per plate (toppings)
Ingredients for the dip:
- 1 250 g package light cream cheese
- 2/3 cup fat-free sour cream
- 1/4 cup light mayonnaise
Ingredients for the topping:
- 3/4 cup chunky salsa (heat of your choice)
- 1 cup sharp cheddar cheese, grated
- 1/3 green pepper, diced
- 1-2 Roma tomatoes, diced
- 2 green onions, finely chopped (green and white parts)
Method:
Beat together the cream cheese, sour cream and mayonnaise in a small bowl. I use electric beaters. Divide in 3 and store in separate containers in refrigerator until it’s time to serve.
When preparing the plate, spread 1/3 of the base all over a dinner plate. Grate cheese, dice green pepper and tomato, and finely chop green onion.
Layer toppings evenly over base in this order: salsa, cheese, green pepper, tomato and green onion.
The base stores in the refrigerator until you are ready to finish it up with the toppings. Keeps in refrigerator for up to 3 weeks.
