Lemon garlic rosemary flat chicken

Serves: 4-6
Prep time: 2 minutes
Cook time: 25-30 minutes
Special tools: large sauté pan

Ingredients:

  • 1 2.5lb roasting chicken, ‎cut down the back
  • 1 lemon
  • 1 handful fresh rosemary
  • 1 bulb fresh garlic broke into cloves, skin on
  • Salt and pepper
  • Splash of olive oil

Method:

Season both sides of the bird. Slice lemons into rings.

In a large sauté pan, heat the olive oil. Add half of the rosemary and cover with chicken skin side down. Place remaining rosemary on the chicken and top with lemon slices and garlic cloves.

Bake at 375F for 25-30 minutes. Remove and let rest for 5 minutes.

Serve whole or cut into 6 pieces. Garnish with roasted garlic and pan juices.
