Randy Feltis creates drool-worthy finger food, plus homemade rhubarb ketchup for some perfect summer flavour!
Bacon-wrapped chicken chops with rhubarb ketchup

Cook time: 25 min
Serves 6
Ingredients:
- 2 lb chicken wings
- 1/2 lb sliced bacon
- 2 cups sliced rhubarb
- 1 cup icing sugar
- 1 cup red wine
- 1/4 cup red wine vinegar
- 1 chili
- Nub of butter
- Salt and pepper
Method for ketchup:
In a sauce pan, sweat rhubarb in butter.
Deglaze with red wine and vinegar, slowly add icing sugar.
Bring to simmer for 5 minutes and let rest for 20 minutes.
Blend, season and serve.
Method for chicken wings:
With a sharp knife, French the small end of the wing (clean the meat off the bone).
Wrap with bacon, season and bake at 400 degrees for 16 minutes or until crispy.
Remove and serve with rhubarb ketchup.
