One-bowl Asian coleslaw

Asian coleslaw

Dressing ingredients:

  • 1/4 cup (60 mL) natural crunchy peanut butter (it has to be natural or it won’t work)
  • 1/4 cup (60 mL) rice vinegar (lower sodium or sodium free, your choice)
  • 2 tbsp (30 mL) lower sodium soy sauce
  • 2 tbsp (30 mL) hot sauce

Salad ingredients:

  • 1/4 of a small green or red cabbage, sliced as thinly as you can
  • 1 red pepper, sliced thinly
  • 1/2 bunch fresh parsley, rinsed, patted dry, and chopped
  • 1/2 bunch fresh cilantro, rinsed, patted dry, and chopped
  • 1/2 cup (125 mL) unsalted peanuts

Method:

Make the dressing: in a large bowl whisk together the peanut butter, rice vinegar, soy sauce, and hot sauce.

Add all of the sliced and chopped vegetables to the bowl. Toss. Add peanuts, toss and serve.

Makes 6 cups (1.5 L). One serving = 1 ½ cups (310 mL)
