Our Dino Dilio sent us his Thanksgiving-inspired take on a traditional meatloaf! Here’s what he had to say about it: I am a big fan of meatloaf. It’s true comfort food. A few years back I decided to make a Thanksgiving version of meatloaf for a gay gathering I was having. I wanted the traditional turkey and stuffing vibe but not all the fuss and baby-sitting that goes with it. It was a success! Here it is for you to enjoy. Happy Thanksgiving.

Thanksgiving loaf

Ingredients:

  • 1 package ground turkey
  • 1 box Stove Top Turkey Stuffing
  • 1 small onion, diced
  • ½ garlic head, minced (I like garlic!)
  • 2 eggs
  • 1 tbsp dried sage
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste

Method:

Preheat oven at 375° F (190º C).

Pour stuffing mix into a bowl. Add hot boiling water, as directed on the box. Mix with spoon. Cover with lid or plastic cling. Let stand 10 minutes.

Put all ingredients in a large bowl. Mix well together with hands. Pour mixture into buttered loan pan and bake for 1 hour. Let stand 20 minutes.

Serve with favorite sides. Mine include mashed potatoes, steamed Brussels sprouts with lemon and butter, both kinds of cranberry sauces (whole berry and jelly) and, of course, plenty of turkey gravy.
