Green goddess salad

Ingredients: 

  • 1/4 cup Beautiful Basil Pesto
  • 1/4 cup plain yogurt
  • 2 tbsp mayonnaise
  • 1 tsp lemon zest
  • 2 tsp lemon juice
  • 2 anchovy fillets, minced
  • 1 head Bibb lettuce, torn
  • 1 head radicchio, torn
  • 1 Belgium endive, torn
  • 1/2 English cucumber, sliced
  • 1 avocado, cut into thin wedges
  • 1/4 cup chopped chives

Directions: 

Whisk pesto with yogurt, mayo, lemon zest and juice and anchovies in a bowl. Season with fresh pepper.

Layer  Bibb, radicchio and endive on a platter. Top with cucumber, avocado and chives.

Drizzle salad with Green Goddess Dressing and serve immediately.

serves 4 | Per serving 240 calories, 5 g protein, 12 g carbs, 21 g fat, 5 g fibre, 189 mg sodium. Excellent source of folate.
