Simply Summer: Three fresh fruit salsas

Enjoy summer's fresh produce with these easy salsas, perfect on top of fish or chicken, or served with your favourite corn chips!

Fresh, seasonal fruit is abundant at this time of year, and it’s easy to gobble it all up before you use it in your cooking or baking! These three fruit salsas are worth setting aside some of your fresh produce — they’re so easy to throw together on a hot summer day, and they’re just as good on top of fish or chicken as they are served with your favourite corn chips!

Peach salsa

Ingredients:

  • 2 cups of peeled, pit­ted and diced peaches (approximately 3 peaches)
  • 1 cup unpeeled, diced cucum­ber
  • 3/4 cup diced red pep­per
  • 1/4 cup washed, finely chopped cilantro
  • 4 tbsp lime juice
  • 1 tsp of minced chipo­tle chiles (adjust depend­ing on how much heat you like, this is fairly mild and I am a wimp)

Method: 

Mix all the ingre­di­ents except the chiles. Sep­a­rate the amount that you think you’ll give lit­tle kids or those with zero tol­er­ance for heat. Then add your chiles and stir it all together well. Taste and check sea­son­ing. Chipo­tles are more smoky than fiercely hot (which is why I like them!) so you can usu­ally add a bit more than you would with, say, jalapenos.

Strawberry salsa

Ingredients:

  • 1 cup hulled and diced strawberries
  • 1 cup watermelon cubes, diced
  • 1/4 cup diced red onion
  • 1 tbsp lemon juice
  • 1 tbsp fresh chopped cilantro

Method:

Mix all ingredients together in a bowl and toss gently.

Grape salsa

Ingredients:

  • 2 1/4 cups halved red grapes
  • 1 large clove gar­lic, minced
  • 1 tbsp extra-virgin olive oil
  • 1 tsp fresh chopped cilantro

Method:

Wash and cut grapes, as well as the gar­lic and cilantro. In a medi­um bowl, mix grapes with cilantro, gar­lic and oil. Toss and serve with corn chips or toasted multi-grain pita.
